Greek Salad A La Carte – Create a Lunchtime Potluck at Work

I’m not sure who came up with the idea to do potluck style lunches at work…that is a small point though. It’s the wonderful creations we were so fortunate to taste that I still remember. I’ll have to say the Greek Salad days were most definitely my favorite!

Greek salad is one of those perfect meals…crunchy, soft, savory, tangy and healthy to boot! More is better too, skimping out on any of the ingredients changes the whole bowl of salad. It’s all or nothing as far as I’m concerned!

Besides giving you the ingredient check list to have a Greek Salad potluck lunch with your co-workers I thought I’d toss in a couple other ideas to help you kick off your lunchtime potlucks. If there are any naysayers, just make sure they get to hear the oohs and ahhs as all the potluck participants are eating and enjoying the meal…hedging a bet they will hop in the next go ’round.

Greek Salad Ingredients
Red Leaf and or Romaine Lettuce, washed and shredded
Feta Cheese
Red Onion, sliced into thin rings
Olives, black or kalamata
Tomatoes, cherry or small
Pepperoncini
Cucumbers, washed and sliced
Balsamic Vinegar and Olive Oil Dressing
French or Artisan Bread

Other Potluck Ideas:
- Sloppy Joes and coleslaw
- Crockpot Chili (everyone brings an ingredient, tosses it in the crockpot to cook until lunchtime) and condiments like sour cream, grated cheese, chopped onions.
- Salad Bar
- Baked Potato Bar
- Build a Sandwich and chips
- Birthday Meal, everyone brings a fave recipe, except for the person with a birthday
