Leanne and I ‘met’ on Squidoo several months ago through our various groups…when I got word about her new website you betcha’ I had to go check it out. Wow! And then wow! again when I grabbed the free vegetarian meal plan offered on her site. Not only is the vegetarian meal plan packed with tips, tricks, and recipes…it is well thought out and beautifully designed. Let’s get to know Leanne and her hubby Darryl a little bit more with this relaxed interview that she agreed to do with me the other day.

What’s the one kitchen tool you could not live without and why?

My big soup pot. I couldn’t live without it because it allows me to cook large amounts of soup, beans, stews and other dishes that last me several days (then I don’t have to cook every day)!

What are you the most proud about on The Lazy Vegetarian?

Wow. I’m proud of a lot of things! I’m proud of the concept and that it resonates with so many people. I’m proud that we can help others eat healthy foods and teach about quick, easy and nutritious vegetarian eating. I’m proud of the fact that my husband and I are doing this together and using both our passions to build something for ourselves as well as for other people. And I’m proud of how quickly things grew (we’ve only been online with this for about a month and a half)!

What pantry items should every ‘lazy’ cook have on hand?

This is a hard question, because I have more fridge items than pantry items. When I think of “pantry,” I think of cupboard goods. So, I’d have to say couscous (it’s just so darn quick), canned beans (dried beans are better nutritionally, but canned ones are quicker), veggie broth, brown rice, wild rice, olive oil, seeds and nuts (nuts and seeds can be added to almost anything easily).

What three ingredients from the summer bounty would inspire you to make a meal and why?

Beans (yellow and green), carrots and squash (yellow zucchini, pattypan, baby squash of other types) inspire me to make a meal because they’re my favorites. I love these veggies fresh from the garden or the farmer’s market and they’re so simple to use, so good for you and so yummy!

My favorite moment of the day is…first thing in the morning when it’s peaceful and quiet. It’s when I get a lot of online work done as well as my meditation, writing, pondering and reading time.

  2. I like my big soup pot too. They are so sturdy, hold a lot of food to feed a lot of people and they cook so well. Not really sure why people use slow cookers when these work so well
