I have always enjoyed cooking. I learned from my mother and grandmother as most of us did I’m sure. My mom was a southern cook, so for most of my life I have enjoyed cooking from the south. Food that is rich, full of fat and flavor. My husband says my meals are really good. I believe him. I enjoy them too. But in the last several years it became necessary to change my style of cooking to a bit more healthy. So I have gotten pretty good at modifying a recipe and turning it into a more health conscious cuisine.
After all I am nurse. I should be health conscious. I should be setting a good example….oh but it’s really hard. I love food and I love eating, and I really love cooking. But I bit the bullet and have come to a happy solution. I cook and eat and enjoy healthy southern dishes! Oh don’t get me wrong. Some southern dishes were created not to be healthy. A girl does have to have a little fun doesn’t she?
My usual M.O. is to find a recipe I like and experiment with it. I’ll take out some of the less healthy ingredients and substitute others. Give it a try and reject or accept whatever it turned out to be. My husband is the taste tester for our family. Whatever he says goes, most times.
I am also completely addicted to the food channel. I love them all especially the food challenges. It all just seems to stimulate your mind to try new things and to not be intimidated and just go for it. It really usually does turn out to be so wonderful. And if variety is the spice of life. Than my kitchen is full of life and spices.
I do most of my cooking without the aide of a recipe. Oh I have thousands of recipes and I collect them all the time but I just use them for ideas and specific things I may not have learned yet. But my cooking is straight from the hip. I just put it together because I know what tastes good. I’ve done well so far.
