Ground Turkey, Apricots and Onions

Apricots with Egg and StrawI have a few special reasons for adding these three ingredients. Number one – I cannot wait to share a recipe from my mom to me to you (my version is a little bit skinnier). Number two – these ingredients can be so versatile if you put on your thinking cap…I hope my recipes and compliments spur your thinking! Number three – Ground turkey is a low fat alternative to ground beef and apricots (find em’ fresh May through August) are naturally packed with beta-carotene, potassium, vitamin A, vitamin C and dietary fiber.

Curried Apricot Turkey

Ingredients
1 pound ground turkey
1 medium onion, chopped
1 clove garlic, minced
2 teaspoons curry powder
3 tablespoons flour
8 fresh apricots, wash and slice in half, pit removed*
1 3/4 cup chicken broth, use low or no sodium as needed

In a large frying pan sprayed lightly with olive oil saute ground turkey until lightly browned. Remove to plate. Add onion and garlic to the drippings, saute, stirring constantly for 8-10 minutes. Sprinkle in curry powder and flour, stirring and cooking for 1 minute. Slowly stir in the chicken broth, cook until thick. Add cooked ground turkey, apricots, mix well and heat through. Makes 4 servings.

*Apricots – replace with a #303 can (17.5 oz) can of apricot halves in lite syrup or water; well drained

Compliments for this recipe…
- Spoon your serving onto brown rice
- Add a side of steamed veggies
- Top the Curried Apricot Turkey with banana slices, raw roasted coconut, raisins, chopped green onion tops and or crushed red chili peppers.

Apricot Twisted Turkey Meatballs

1 pound ground turkey
1 medium onion, finely chopped
2 tablespoons corn meal
1/8 teaspoon dried sage
1/8 teaspoon dried cardamom
salt and pepper, to taste
8 apricots (2 cups), washed, pits removed

Preheat oven to 350°

In a small mixing bowl add ground turkey, corn meal, onion, sage, cardamom, salt and pepper. Mix well and divide into eight portions. Chop apricots into small chunks, mash a bit with a fork. On a plate flatten each turkey portion into a patty, add 1/4 cup apricots to center, shape into a ball, place on a lightly greased cookie sheet. Repeat this for the remaining portions of seasoned ground turkey.

Bake the Apricot Twisted Turkey Meatballs for 20-30 minutes or until golden browned. Makes 4 servings.

Compliments for this recipe…
Dip into a honey yogurt sauce seasoned with lemon and a hint of mint.
A side of curried rice with raisins.
Stir-fried veggies topped with toasted sesame seeds.

♥ My Three Ingredient Guidelines: Salt, pepper, other herbs and spices, flour, oil, butter, margarine, sugar, and broth or water (misc. pantry items) aren’t counted in the ingredient totals. While complimentary sides add to the count of the ingredients, they are merely suggestions to round out the meal.
