Hamburger, Corn and New Potatoes
What would you do with these three ingredients to make a meal? Here are a few ideas, please feel free to share your recipes for these three ingredients too!
♥ Make a pouch from a large piece of heavy duty aluminum foil, leave one end open. Now crumble 1/4 to 1/3 of a pound of lean ground beef, tuck into pouch. Layer on top 1/2 cup fresh off the cob or frozen corn and 1/2 cup one inch diced new potatoes that have been cooked to tender. Season with salt, pepper and your favorite herbs and spices. (Try rosemary, dill, crushed red chili peppers, basil, garlic and or cilantro.) Drizzle in 1/4 to 1/3 cup of vegetable or beef stock. Seal the pouch and place on grill over medium heat. Cook for 20-25 minutes. Take from grill, place on plate, make a slit through top of foil pouch and eat! Serves 1
♥ Drizzle in a small amount of olive oil into a saute pan and add; fresh corn sliced from two ears, 1/2 cup one inch diced new potatoes, plus your favorite seasonings. Saute over medium high heat for 5-8 minutes or until the potatoes are tender-crisp, stirring frequently. In the meantime shape 1/4 pound of hamburger into a patty and broil. On a plate place hamburger patty and scoop the corn, potato mixture on top. Serve with a side salad or fresh sliced tomatoes drizzled with balsamic vinegar and olive oil. Serves 1
