Buttermilk Banana Pancakes and Ham

Yumo! We had breakfast for dinner the other night…hot damn it was so darn good. The sweetest thing about having breakfast for dinner is you get to make it AND eat it in your jammies! <—That is my house rule by the by!

Earlier in the afternoon my hubs had baked a brown sugar glazed ham – he loves doing that to make and take his own deli sandwiches to work…while he wasn’t looking I snagged a couple of pieces for my idea of breakfast for dinner. Buttermilk pancakes dotted with ripe bananas, drizzled with homemade maple flavored syrup, plus brown sugar glazed ham warmed and dipped in hot spicy mustard…oh my!

My mom’s recipe for buttermilk pancakes was always doubled or tripled when our guys were living here at home…geez they could eat! As it stands though, you’ll get a dozen or so buttermilk pancakes – plenty for two with some leftover to snack on! ;)

Mom’s Best Ever Buttermilk Pancakes

Ingredients
2 cup flour
1 3/4 teaspoons baking soda
3/4 teaspoon baking powder
2 cups buttermilk
2 eggs
1/4 cup melted butter

Mix together dry ingredients in a medium bowl. In a separate bowl, beat together buttermilk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook. Heat oven to warm (170°).

Heat griddle to 375° - 400°…flick water across the surface, if it beads up and sizzles, it’s ready! Pour the wet mixture into the center of the dry mixture, using a wooden spoon or fork to blend. Stir until it’s just blended together. Batter will have small to medium lumps. DO NOT over mix the batter.

With a ¼ to ½ cup measure pour homemade pancake batter on hot griddle about 2 inches away from one another. Watch for bubbles to form on top and for the pancake edges to be slightly dry, about 2 minutes, flip over. Cook until golden brown on bottom, about 1 more minute.

Repeat with remaining batter, keeping finished pancakes on a heatproof plate in the warm oven. Serve warm.

Delish additions and tips
- Stir fresh fruit into batter; berries and bananas are the best!
- Slice or drop fruit on top of the pancake batter, press in a bit, flip when ready.
- Sprinkle in your fave herbs and spices – sweet or savory.
- Stir chopped/crumbled ham, bacon, sausage into the pancake batter.
- For extra fluffy pancakes remember to not over mix the pancake batter.
