Roast Beef

One of our all time favorite meats in a sandwich is roast beef. I cringe at the price I’ve paid for roast beef at the deli counter though, so unless I plan ahead to prepare, cook and slice the roast here at home we rarely have it available for our sandwiches.

Added roast beef to our shopping list the other day and oh, oh we are so happy that I did. After letting the roast settle on the counter for 15 or so minutes I went about getting it ready to bake. This is easy as buttering warm sliced bread and just as delicious too.

With a sharp knife poke several deep holes deep into the roast, these are pockets for cloves of garlic. Peel 5-10 cloves of garlic, depending on taste and how many holes you poked into the roast. Cut garlic cloves in half or into thirds, press each piece into the hole making sure the garlic will not pop out. Drizzle and rub the whole roast with EVOO (olive oil), sprinkle with fresh ground pepper. Place in a large baking pan and bake in a 325° oven, times vary depending on the size of your roast.

When the roast is done let it cool, refrigerate, and then slice…very thin pieces of roast beef…the next day. The garlic gives the roast a very nice flavor, adds a nice taste to your roast beef sandwiches.  Here is my perfect roast beef sandwich…

Lightly toasted bread, spread a thin layer of mayo on both pieces and layer with
- lettuce
- tomato
- red onion, thinly sliced
- a handful of jalapenos, pickled from the jar
- a slice or two of cheddar cheese
Smoosh it all together, eat and enjoy…hot, garlicky and crispy! Yumo!

On the side I baked strips of sweet potato that had been tossed in EVOO and seasoned with a dusting of salt and fresh black pepper…as you can see from the photo, they did not last long enough for the roast to cool…lol! Try em’ though, because baked sweet potatoes are loaded with beta carotene and a healthy alternative to fries. No dip needed either, lightly seasoned baked sweet potatoes are scrumptious straight out of the oven!
