Correen’s Gone Loco Moco!

Ever heard of a loco moco? I was clueless until I read my friend Susan’s travel article all about loco moco…recipe included! The original recipe outta Hawaii calls for hamburger, brown gravy, white rice and a fried egg. For our Healthy Bites Sunday feature I decided to work on creating a skinnier version loaded with lots of spices to take the flavor to another level.
Here is the step-by-step recipe to make Correen’s Loco Moco! Doesn’t the picture look yummy?
Ingredients
1/2 cup bulgur wheat
1/2 water
1 tablespoon olive oil
Fresh spices and herbs, to taste (I used fresh orange thyme and rosemary to equal 2 tablespoons ![]()
3 garlic cloves, minced
1/2 cup onion, minced
1 1/4 pounds ground turkey
1/2 cup old fashioned oats
5 eggs, poached
5 cups cooked brown rice
1 10.5 oz can Campbell’s turkey gravy, warmed
Put bulgur wheat into a bowl, stir in water. Let sit for 30 minutes.
In a saute pan add olive oil, heat. Stir in herbs/spices, garlic, and onion. Saute for 5-8 minutes.
In a large bowl add ground turkey, bulgur wheat and old-fashioned oats; mix well. Add herbs/spices, garlic and onion; mix well. Form into 5 patties. Spray saute pan with cooking spray and cook each turkey patty until golden brown on both sides, about 8-10 minutes.
Now it is time to assemble your bowl of Correen’s Loco Moco…
1. Add one cup of brown rice
2. Stack your cooked turkey patty on top.
3. Drizzle 1/4 cup of turkey gravy over the ingredients.
4. Top with a poached egg.
5. Sprinkle with chopped green onions.
6. Eat and enjoy!
